Recipe Tuesday: Margarita Ice-Cream

A very quick and fun dessert that takes about 10 minutes to prep in the morning, then throw in the freezer until required later that night. A friend told me about this recipe (originally devised by Nigella Lawson) when I was working out a menu for a dinner party a few weeks ago and I made it as an accompanyment to cheesecake.


  • 120ml / 1/2 cup lime juice
  • 30ml / 2 tablespoons tequila
  • 45ml / 3 tablespoons of Triple Sec or Cointreau
  • 150g icing sugar
  • 500ml / 2 cups double cream
  • Grated lime rind for decoration


  1. Pour the lime juice, tequila and liquer into a bowl and mix together
  2. Add icing sugar and stir in the sugar until it is dissolved
  3. Beat in the double cream until thick but not stiff
  4. Pour into a bowl/container and cover
  5. Place in the freezer for 6 hours or so
  6. Serve with some grated lime rind on top
