Recipe Tuesday: Key Lime Pie

Okay, technically you need genuine Key Limes to make this but you can still use any limes that you have to make a truly simple, tasty pie.


  • 75g (3oz) Butter
  • 225g (8oz) digestive biscuits (crushed)
  • 300ml (1/2 pt) double cream
  • 4 large limes (juice and grated rind)
  • 1 can (approx 400g) condensed milk
  • Whipped cream and lime slices for decoration



  1. Heat the butter in the pan and stir in the biscuits
  2. Press mixture into  the base of a 20cm deep loose bottomed flan tin
  3. Chill for an hour or so
  4. Whisk the remaining ingredients until thick and creamy
  5. Spread over the biscuit base
  6. Chill for an hour
  7. Decorate with whipped cream and lime slices
